Yadidya Greenberg
An Israeli-born ba’al teshuvah, Yadidya spent three years learning at Yeshivat Bat Ayin in Bat Ayin, Israel. In the summer of 2011, he studied shechita and received his kabbalah (certification) from the honorable Rabbi Yisroel Landsman Z”L. Since then, Yadidya has extensively studied shechita and worked throughout the kosher meat industry.
Recognizing the serious lack of instructors and proper equipment for kosher slaughter in the United States, Yadidya founded The Kosher Cut® in 2018. Today, in addition to running The Kosher Cut®, he owns and operates Chosen Farms in Pemberton, NJ, where he produces America's Finest Kosher Poultry.

Rabbi Dovid Shaffier
Born in California, Dovid studied at Yeshivas Ohr Elchonon in Los Angeles and later at Kollel Ohr Tzaddikim in Tsfas. He went on to serve as Menahal Ruchani and Halacha instructor at Yeshivas Teferres Moshe in Tsfas, and also taught at Yeshivat Yushuat Mordechai in Nachliel.
In the summer of 2011, Dovid trained in shechita under Rabbi Yisroel Landsman Z”L, from whom he received kabbalah. Following his certification, he worked in a kosher beef plant, eventually serving as head shochet and bodek sakinim. During this time, he also learned the craft of making chalafim and began teaching shechita to students.
This work culminated in his groundbreaking book, Esek HaShechita: A Practical Guide for Preparing a Chalaf. Today, in addition to his role at The Kosher Cut®, Dovid serves as a kosher supervisor for the Star-K.
