All lectures and materials were developed by Rabbi Dovid Shaffier—The Kosher Cut’s® Senior Shechita Instructor, expert knife maker, and author of Esek HaShechita.
Course content is available via the Udemy learning platform and/or as audio and text files on a USB flash drive for flexible, offline access.
Important further details on the course are listed below.
Please note:
Hebrew Comprehension Requirements: Lectures and tests are in English, but the core course materials are in the original Hebrew. Some materials are available in translation, but not all. We strongly advise that students have at least an intermediate to advanced level of Hebrew comprehension if pursuing the course for certification purposes. While it may be possible to complete a certification course without that level of Hebrew, doing so would typically require extensive tutoring and is not generally recommended.
Hands on Training: This course does not include any practical training in slaughter or knife sharpening. For hands-on training, please refer to our Shechita Training page.
Tutoring Options: Students may choose to add tutoring sessions—offered in person or via Zoom/phone—to support their learning. Tutoring is available at $100 per hour for one student +$20 per hour for each additional student.
Yeshiva/Kollel Specials: Discounts may be available for bulk purchases and for Yeshiva/Kollel students. Contact us to inquire.
Certification: Students who complete the course and wish to receive Hoda'ah/Kabbalah (when eligible) or a Course Completion Certificate may take our comprehensive oral exam, administered by Rabbi Dovid Shaffier or Rabbi Yadidya Greenberg.
- Exams typically last 1–2 hours
- Cost: $100 per hour + $50 certificate fee
- Upon successful completion, an official certificate will be issued

Knife Build
Knife Build
Our knives are hand-thinned after hardening to create an ultra-thin, easy to sharpen and durable edge.
We use only top-quality high-carbon stainless steel for our professional line, ensuring lasting sharpness and strength. Each professional knife features a full tang, a high-quality epoxy handle, and solid brass bolsters.
Our student knives are crafted from a softer, lower-grade steel—still good in quality—designed to provide reliable performance and easy maintenance. They also feature a plastic half tang handle.
