These chalafim feature well-squared corners, ultra-thin blades, and are made from hard, high-performance metals—making them easy to sharpen and exceptionally durable. Sheep knives come with a quality faux leather case (a $40 value).

We use only top-quality high-carbon stainless steel for our professional line, ensuring lasting sharpness and strength. Each professional knife features a full tang, a high-quality epoxy handle, and solid brass bolsters.
Our beginner/student knives are crafted from a softer, lower-grade steel—still good in quality—designed to provide reliable performance and easy maintenance. They also feature a plastic half tang handle.
